I think you are too pessimistic for our long term prospects. Modern organic agricultural methods (as pioneered by John’s Jevons) can return over 100% of the nutrients to the soil and feed humans in the process. Most metals will suffer from the degradation that you talk about, but bog iron is a renewable resource. I suspect that we will most likely end up in a world that looks a lot like 1400-1600
